Egyptian Koshari

Ingredients:

  • 1 cup brown lentils, rinsed and drained
  • 1 cup basmati rice, rinsed and drained

  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup hot sauce, or to taste
  • 1/4 cup garlic juice
  • 1 tablespoon white vinegar
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Cook the lentils in a medium pot over medium heat for 15-20 minutes, or until tender. Drain and set aside.
  2. Cook the rice in a separate pot according to package directions. Drain and set aside.
  3. Cook the vermicelli pasta in a small pot of boiling water for 2-3 minutes, or until al dente. Drain and set aside.
  4. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened and translucent, about 5 minutes. Add the garlic and cook for 1 minute more.
  5. Stir in the crushed tomatoes, cumin, coriander, salt, and pepper. Bring to a simmer and cook for 15 minutes, or until the sauce has thickened.

Stir in the chickpeas, hot sauce, garlic juice, and vinegar.

To assemble the koshary, divide the rice, lentils, vermicelli, and tomato sauce among serving bowls. Sprinkle with parsley and serve hot.

Tips:

  • Use a good quality olive oil for the best flavor.
  • Don’t overcook the lentils or they will become mushy.
  • If you don’t have vermicelli pasta, you can use elbow macaroni or another small pasta shape.
  • Feel free to adjust the amount of hot sauce to your liking.
  • Garnish with additional parsley, if desired.
